This classic dish is a crowd – pleaser and extremely easy to make.
Ingredients:
- 4 large potatoes from our high – quality potato supply
- 8 slices of bacon
- 1 cup of shredded cheddar cheese
- 1/4 cup of sour cream
- 2 green onions, chopped
- Salt and pepper to taste
Instructions:
First, preheat your oven to 400°F (200°C). Wash the potatoes thoroughly and pat them dry. Pierce the potatoes several times with a fork to allow steam to escape during baking. Rub the potatoes with a little olive oil and sprinkle with salt. Place the potatoes on a baking sheet and bake for about an hour, or until they are tender when pierced with a fork.
While the potatoes are baking, cook the bacon in a skillet over medium heat until it is crispy. Remove the bacon from the skillet and drain it on a paper towel. Crumble the bacon into small pieces.
Once the potatoes are done, cut them in half lengthwise. Gently scoop out some of the potato flesh into a bowl, leaving a thin shell. Mash the scooped – out potato with a fork and add a little sour cream, salt, and pepper. Stir in half of the shredded cheddar cheese and the crumbled bacon.
Spoon the potato mixture back into the potato shells. Top with the remaining shredded cheddar cheese and place the potatoes back in the oven for about 10 minutes, or until the cheese is melted and bubbly. Garnish with chopped green onions before serving.
